For hundreds of years sorrel leaves have been used in cooking, usually in fish dishes. The leaves are very sour – they are the most sour in the middle of summer, which is when they are best picked.
There are two different kinds of flower – the male flower and the female flower – and these grow on two different sorrel plants.
Towards the end of the summer, the flowers and leaves all turn bright red.
